Chicken Thigh CrockPot Recipe

IMG_1019With -4 weather temps here in NYC, the kids and I have been enjoying some much needed family time. I can’t even tell you how many times I have already seen the Star Wars series (yes, life with boys!).

So with a house full of boys, you can imagine how many times the fridge has been raided and I am always asked “Whats to eat?!”. And that where my crockpot saves the day.  So today, I am going to share with you the easiest chicken recipe with ingredients that you may already have in your cabinet. And if you have hungry eaters like me, then this is the recipe for you!  

This is the easiest, quick and super tasty chicken recipe that everyone will surely love!

OK, here;s what you’ll need:

  • 1 1/2 to 2 pounds, skinless chicken thighs (I usually seasoned my chicken, but since this meal has a flavorful taste you may not need to).
  • 1/2 cup soy sauce
  • 1/2 cup ketchup
  • 1/3 honey

Directions. 

Use a 4 quart slow cooker.  I highly recommend using a liner (its great for clean up and for additional juiciness to your meal).  Chop up some red and green peppers and onions and put in the cooker.   In a small bowl, begin to mix in the wet ingredients.  Add the chicken into the bowl and mix all together.  Now you can put the chicken into your cooker.  Cook on low for 6 hours or high for 3 hours.  Serve with rice or steam veggies.

The ketchup and honey taste like a bbq sauce, but slightly a rustic taste.
