With the holidays right around the corner it can be a dilemma on what to bake for your next family gathering. But don’t fret, here is a easy breezy recipe especially for you non-cooks.

Every Thanksgiving and Christmas, my (now late) mother-in-law would make these yummy pecan tea cups, which she honorably called “Ginny’s Tea Cups”. So when I was given the recipe soon after she had passed, I made sure to carry on the tradition each and every holiday. And trust me, not a piece of crumb is left behind.

Ginny’s Tea Cups

Ingredients:

Dough:
1 – stick of margarine or butter
1 – cup of flour
1- 3 oz cream cheese

Filling:
1- cup brown sugar (packed or loose)
1- egg
1- ½ tbsp of soft butter
1 – tbsp vanilla
1 – cup pecans or walnuts

Serves 27-30

Directions:

Preheat oven to 350 degrees. In medium bowl, cream softened butter and cream cheese. Add flour. Mix well. Chill dough for 20-30 minutes. Divide dough into fourths and then roll each into six balls. Place one ball in each cup of a mini tart pan. Use your fingers or a tart tamper to press out into a tart shell.

In medium bowl, combine egg, brown sugar, melted butter, vanilla, and pecans or walnuts. Mix well. Fill tart shells 2/3 full. Bake for 25-30 minutes until delicately browned. Allow to cool for 10 minutes and then remove from pan. Sprinkle with powered sugar.

To know me is to know that I am not a cook, but when I do brave the kitchen I just can’t help but jump up and down with joy and then of course share it with you!

So with it being way too hot to cook (yes, one of my many excuses) I was looking for a refreshing treat and that’s when I hopped on the Internet and found this FAB recipe for STRAWBERRY CHICKEN SALAD.

Recipe:

  • Put as much spinach (or use different green leafy lettuce to make it interesting) onto a big plate.
  • Top the lettuce with:
  • 10 strawberries, hulled and halved
  • 4 oz. grilled or baked chicken breast, cut into strips
  • 1 tomato, cut into chunks
  • Toss everything together
  • Throw a handful of feta or Gorgonzola cheese over the top
  • Add your favorite dressing and voila

All are DELICIOUS and both are very low in calories.

Happy Memorial Day!

Memorial Day is the perfect chance to get together with friends and family for a patriotic themed party! Decorate with RED + WHITE + BLUE and include some of these festive ideas below!

What I love most about Memorial Day is the warm weather – Here in NYC its HOT! HOT! HOT!  How is it in your neck of the woods??

I am not one to cook, even with all the cute kitchen appliances given to me at my bridal shower, but I have since began experimenting in the kitchen every since I  became a stay-at-home mom.

So today I am featuring my quick and easy recipe for Chicken Parmesan.


INGREDIANTS:

2 large whole boneless skinless chicken breasts (about 1 – 1 1/2 pounds total)
2 cups dry bread crumbs (for low fat option, just use milk)
2 cups store bought Italian tomato sauce
1/2 pound fresh mozzarella cheese, thinly sliced or grated
Salt and freshly ground black pepper to taste

  1. With the flat side of a cleaver or a heavy skillet, pound or roll the chicken breasts between two sheets of plastic wrap to the desired thickness (usually about 1/4″).
  2. Spread the bread crumbs on a flat plate.
  3. Preheat oven to 400 degrees F.
  4. Set the tomato sauce on low heat to warm (it will spread more easily).
  5. Thoroughly coat cutlets with bread crumbs (press down firmly while coating with bread crumbs).
  6. Place 1/2 cup of the warm tomato sauce in the bottom of a baking dish large enough to hold the cutlets in one layer. Add the cooked cutlets to the baking dish; cover with the rest of the tomato sauce of the warm tomato sauce and the sliced/grated mozzarella.
  7. Cook the chicken parmesan in the oven for ten minutes. If the cheese has not melted/browned you can slip it under the broiler for a minute or so – keep an eye on it so the cheese does not burn.
  8. Serve with grated Parmesan cheese. Goes great with a side of pasta and a green salad and or French/Italian bread, or garlic bread.

If there’s one thing that this momma does not know how to do is…COOK!  Trust me I’ve tried.  When I got married, I swore to my hubby that he would smell the delicious scent of home cooking everyday but, with my hectic work schedule and just ole plan “I just don’t know how to” I soon broke that vow and became a pro at ordering take-out…come on people that takes skill.  Then baby came along and I swore that this momma would make everything homemade but, then early discovered Plum Organics and Earth’s Best Organic baby food, that was just like home cooking to me…right?  Well, now that Lil’ B is almost 9 months old his Pediatrician wants me to begin introducing him to “real” food, basically whatever mommy and daddy eats, baby should eat to..oh boy!  What is this non-cooking mommy suppose to do???!!!

So last night, I attempted the unthinkable and cooked for Lil’ B…I looked in my kitchen cabinet and had a A-HA moment!  Pasta!  yep, that’ll do…I boiled the water (its a start), cooked enough for daddy and I and could not wait to begin this new level of motherhood.  Giddy with excitement, I sang a pasta song to my son (I used the theme to “twinkle twinkle little star”, which goes with everything).

Pasta drained, its now ready to be served.  Cutting it up in tiny tiny pieces I began to feed it to my open mouthed boy.  “Mmmm”” I expressed in glee…with one bite my son began to wrinkle his face and spit out.  “Come on Lil B, Mommy made you some delicious pasta”, with a look as if to tell me “Who cares” Lil B could not and would not have another bite.  After beating myself up, I then later came to realization that practice make perfect and as I have conquered the task of giving birth (granted I had a C-Section) and breast-feed this momma can do just about anything, I will not be discouraged.
